Chocolate Pizza Recipe

Makes one large pizza.

To make the dough:

  • 125g tipo ’00’ flour

  • 125g wholewheat spelt flour

  • 5g salt

  • 3g fast-acting Yeast

  • Glug of olive oil

  • 1 tbsp yoghurt

  • 1 tsp sugar

  • 170ml warm water

Combine all the dry ingredients, making sure that the salt and yeast are on opposite sides of the bowl. We used a mixer with a dough hook to make our dough, but you can just as easily knead this by hand (it should take 10 minutes or so). To the mixer or mixing bowl, add the yoghurt, glug of olive oil and most of the water. As we were using wholewheat spelt flour for an extra nutty flavour, water amounts can vary. Add the water until the dough comes together (if it needs a little more, give it a little more. If it needs less, use less). Knead until smooth and silky. Leave to rise in a clean bowl, in a warm place, until doubled in size (this can take a couple of hours).

Once risen, roll the dough out using a rolling pin on a floured surface. It should be the size of the largest flat tray that will fit into your oven. Dust the tray with semolina, or flour if you do not have semolina, and place the dough on the tray so that it does not overlap the sides. Next, to top this glorious dough.

For the toppings:

  • Nutella

  • Whole almonds, shelled and peeled

  • Yoghurt

  • Soft fruit (we used strawberries)

  • 1 box Cantucci Biscotti

  • 1 box Chocolate Biscotti

  • 1 Milk Chocolate Bar

  • 1 White Chocolate Bar

Start by getting your oven as hot as you can or up to 250°C.

You must prepare the toppings of the pizza in two volleys. Firstly, the ingredients that are going to get cooked with the base and then the actual toppings.

You do not want the toppings to burn. Spread your Nutella or any other good chocolate and nut spread to the edges of the base, leaving a few centimetres gap around the edge of the pizza (Nutella must be warm to be spreadable). If you are using a thicker alternative to Nutella, you can let the chocolate spread down with a little oil (this will make it thinner and easier to spread).

Add dollops of yoghurt and sprinkle with whole almonds. To cook the pizza, we like to get it started on the hob, warming up the tray directly over the heat. This isn’t essential, but it helps to give the pizza dough a crunchy bottom. Then, place it in the hot oven and cook for 8-10 minutes until you can see the edges of the pizza browning and you are confident that the base is crispy and cooked.

Meanwhile, prepare your toppings. Roughly cut up your biscotti, half your strawberries, and break up the white chocolate and milk chocolate into microwave-safe cups. Pulse the chocolates 10 seconds at a time in the microwave until melted and runny.

When the pizza is cooked, sprinkle over your biscotti and strawberries. Then, take your chocolates and, using a spoon, pour and drizzle lines of white and milk chocolate all over the pizza. Finish with all of the crumbs and nuts that have come from chopping up the biscotti.

Serve as dessert with ice cream, a smile on your face, and plenty of children.
